Hot water acts as a solvent and yields the wort.
- Extracts the substance from the malted cereals and the hop flowers
- → sweet and bitter liquid = WORT
- 90 % to 95 % of the finished beer
- It takes ± 4 L of water to make 1 L of beer
- Water quality affects the brewing and fermentation that shape the final flavour of the beer
